Warm Soup For The Soul

January is soup month here at our house. It is filling, warms the soul, and makes enough for a few meals. This is a crowd pleaser for everyone and accommodates the allergies in our household too.

Mexican Soup

Ingredients:

2 32 oz. Cartons of vegetable or chicken broth

1 Roasted chicken (All Meat)

2 Cans of cannellini beans (rinsed)

1 Big jar salsa verde

Cumin to taste

Directions:

Dump all of the ingredients into a pot and let simmer for 20-30 minutes.

For Dairy Free: Top with Avocado & Tortilla Chips

For Cheese Lovers: Top with Cheese & Tortilla Chips
