A New Mom Meal

One of the best parts of being part of a great community is getting lots of fun meals from friends and family when you have a baby. A friend of ours made this delicious, super easy crockpot meal for us. Every time I make it, I think back to those newborn days of my two kids, Elise & William.

Crockpot Chicken & Dumplings

4 skinless, boneless chicken breast halves

2 tablespoons butter

2 (10.75 ounce) cans condensed cream of chicken soup

1 can of chicken broth

1 can of water

1 onion, finely diced

1 tube of refrigerated biscuits

1 box of frozen mixed veggies

  1. Place the chicken, butter, soup, water, broth and onion in a slow cooker.
  2. Cover, and cook for 5 to 6 hours on High.
  3. About 90 minutes before serving, open biscuit dough and cut each biscuit into 4-6 pieces. Add to crockpot along with a box of frozen mixed veggies.
  4. Enjoy or share with a friend who just had a baby.
