Make Your Own Take Out: Crockpot Edition

Kim and her husband and daughter in Chicago

When my husband and I lived in Chicago, we discovered our love for Thai food. We had 4 wonderful Thai places within walking distance to our apartment. Once we were back in the Detroit Suburbs, I missed our neighborhood Thai places and tried to create the dishes from scratch.

While some dishes were an epic fail, as time and experimenting went on, I found this culinary gem. It has worked its way into our rotation and reminds me of our early days in Chicago.

Crockpot Sesame Chicken

2 lbs. boneless chicken breast

1/2 cup soy sauce

1/3 cup brown sugar

2 tbsp. sesame oil

3 cloves garlic

1 Red Pepper, Chopped

4 cups fresh broccoli

2 tsp. chopped green onion (or more if you like)

Sesame seeds (optional)

Quinoa or Rice (optional)

  1. Place chicken into the crock pot.
  2. Mix together soy sauce, brown sugar, sesame oil and garlic in a small bowl.
  3. Reserve 1/3 cup of the sauce for dipping after the recipe cooks. Pour the rest of the sauce on the chicken in the crock pot.
  4. Cook on low for 3-4 hours.
  5. Add red pepper & broccoli 45 minutes before serving.
  6. Serve over quinoa (made to directions) or over rice. Sprinkle with green onion and sesame seeds.
  7. Enjoy!
