Worth the Coffee Break

I am visiting my sister this week and she is really the baker of the family. Her cookies, muffins and brownies put my baking skills to shame. And she is most famous for her biscotti recipe.

Every Thanksgiving, my aunt won’t let her though the door unless she has biscotti in hand. Since I am here in New York, I am sharing her secret recipe.

Double Almond Biscotti
1 2/3 cup flour
1/3 cup cornstarch
1/2 tsp baking powder
1/3 tsp salt
1/2 cup of granulated sugar
1 tbs lemon zest
1 tsp vanilla extract
1 tsp almond extract
3/4 cup whole almonds
3 large eggs
1/2 cup almond paste

  1. Preheat the oven to 350º F. Line baking sheet with parchment paper.
  2. Whisk flour, cornstarch, powder, salt.
  3. Beat almond paste, eggs, sugar, zest, vanilla, and almond extract.
  4. Beat in flour mixture. Fold in almonds.
  5. Roll into 2 logs. Bake for 20-25 minutes. Cool for 15 minutes. Reduce oven temp to 325º F.
  6. Cut and bake on each side for 5 minutes.
  7. Enjoy with your favorite cup of coffee. (In my case, it’s skinny, mocha peppermint latte — hold the whip.)
