Date Night Dinner In

My husband travels quite a bit and once Friday rolls around, both of us looks forward to our weekly date night. Sometimes we go out to dinner, but one of our favorite things to do to bond as a couple is Date Night “In”.

We put the kids to bed a little bit earlier and I usually prepare one of the dishes I used to make when we were dating. One of our favorite dishes for date night in is Pretzel Crusted Chicken with Jalapeño Cheddar Sauce. This dish not only won the heart of my husband, but also won the heart of my sister’s soon-to-be husband when she made it for him.

Pretzel Crusted Chicken with Jalapeño Cheddar Sauce

Chicken:

4 quart-size plastic food storage bags

4 small, boneless, skinless chicken breasts

1 5-ounce bag of salted pretzels, any shape

1 tablespoon fresh thyme leaves, chopped

Salt and freshly ground black pepper

2 eggs

Olive Oil, for frying

Directions:

  1. Sprinkle a little water into four medium food storage baggies.
  2. Place 1 chicken breast in each bag and seal it up, pushing out excess air.
  3. Use the bottom of a heavy pot or pan and pound each breast until flat, just shy of busting out of the bag.
  4. Repeat with the other 3 chicken breasts.
  5. Place the pretzels in a food processor or blender and grind until fine. Transfer the ground pretzels to a shallow dish; add the thyme and some salt and pepper.
  6. Crack and beat 2 eggs in a second shallow dish with a splash of water.
  7. One at a time, coat each chicken breast in the egg and then the ground pretzels.
  8. Add the pretzel-coated chicken breast to the hot oil. Cook in a single layer, in 2 batches if necessary, about 3 or 4 minutes on each side, until the juices run clear and breading is evenly browned.

Cheese Sauce:

2 tablespoons butter

2 tablespoons flour

1 cup chicken stock

1 cup milk

2 1/2 cups shredded cheddar cheese

1/4 cup pickled jalapeños, finely chopped (Although fresh jalapeños, taste great too. I usually use 3)

4 scallions, chopped

Directions:

  1. Heat a small sauce pot over medium heat and add butter.
  2. When the butter melts, stir in the flour and cook for 1 minute.
  3. Whisk in the chicken stock and then the milk.
  4. Thicken for 2 minutes then stir in the cheese and melt, for another 2 minutes.
  5. Stir in the jalapenos and scallions. Finish off with a little salt and pepper.
  6. Pour sauce over chicken. I usually serve with fresh broccoli or asparagus.

Enjoy your date night in with your significant other; I know this week I will be trying to beat him in Scrabble!
