Playgroup Lunch Salad

A few years ago, a friend had us over for playgroup in the summer for lunch. She made the most amazing chicken salad and I couldn’t believe she made it herself. It tasted like my favorite deli in Chicago. I hounded her for the recipe and now make it for lunch weekly. It tastes great in a pita or on a croissant. You can add your own fixings and make it your own special chicken salad.

Chicken Salad

Ingredients:

1 lb of chicken breast cooked & shredded (I usually throw mine in the crockpot with 1 cup of chicken broth for easy shredding.)
3/4 cup of mayo (more or less to taste)
1/2 cup of dried cranberries
1/2 cup of diced onions
1 tbs of salad seasoning (more or less to taste)
Any other condiments you like such as lettuce, tomato

Directions:

  1. Toss together and refrigerate for at least an hour for flavor.
  2. Serve on a croissant or over a bed of spinach. Enjoy!!
