What Happens at Grandma’s Stays at Grandma’s‏

The last full week of summer vacation brings along a fun family tradition of visiting Grandma and Grandpa in Upstate New York. Grandma and Grandpa have many fun traditions with my two kiddos that include a sharing bag filled with goodies, countless games of Zingo, flashlight walks around the neighborhood, an annual trip to Adrirondak Animal Land, and making all sorts of delicious treats in Grandma’s kitchen.
The first morning after we arrive pancakes are always on the menu. For me, it is nice not have to cook breakfast and sleep in a little past 7:30. Grandma’s helper in the kitchen was ready as they used chocolate chips instead of blueberries as a special treat.
Fresh Blueberry (or Chocolate Chip) Pancakes
2 cups of sifted whole wheat flour
1/4 cup of honey
3 tsp of baking powder
1/2 tsp of salt
1/2 tsp of cinnamon
2 eggs, lightly beaten
1 1/2 cups of milk
1/4 cup of melted butter
2 cups of fresh blueberries (or 1/2 cup of chocolate chips)

  1. Stir together flour, honey, baking powder, salt and cinnamon.
  2. Add eggs, milk, and butter.
  3. Mix lightly and stir in the blueberries (or chocolate chips)
  4. Cook on griddle, turning when cakes are covered with bubbles.
  5. Serve with butter and syrup or spread with butter, sprinkle with brown sugar and roll.

    So sweet! This article took me back to the days of spending time in the kitchen with my own grandmother. Kim, Thanks for bringing back a delightful memory and for also sharing a yummy recipe.
