Back To School Treats

I hope everyone enjoyed their last unofficial weekend of Summer. I spent the weekend in New York City on a kid-free vacation with my husband and in denial that my eldest is going to start Junior Kindergarten this week. So begins the next 13 years of me packing her lunch and hoping she eats everything — and doesn’t trade her cheese stick for chips or her carrots for a rice cereal treat.
The whole month of September is going to be dedicated to fun quick healthy lunch ideas. I know as a busy parent, it is hard to come up with a lunch plan that your child will want to eat and not trade away.
Having a sweet tooth myself, I am starting off with yummy, easy cookies. These cookies can be made dairy and egg free as well. The cookies also freeze great, so you can always have some on hand for your child’s lunch or even yours.
Chocolate Chip Muesli Cookies
(Note: these cookies are not nut-free)
 Ingredients:
1 cup of Muesli
3/4 cup sifted whole wheat flour
2/3 cup of applesauce
2/4 cup of brown sugar
6 oz package of chocolate chips (dairy-free substitute = Kosher or vegan chocolate chips)
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla
1 egg (egg-free substitute = 1/4 cup of egg replacer)
 
Directions:
  1. Heat the oven to 375.
  2. Sift flour, baking soda and salt together and set aside.
  3. Blend applesauce, sugar and vanilla together.
  4. Beat in egg.
  5. Add flour mixture and mix.
  6. Stir in muesli and chocolate chips.
  7. Drop by tablespoon fulls on a lightly greased cookie sheet.
  8. Bake at 375 for 10-12 minutes.
