Easy Breezy Caprese

Maybe I am feeling nostalgic about my garden, but I miss tomatoes right off my back deck. This gem was inspired by summer ripened tomatoes and the fact, I needed a side to go with Fletcher Soup Week 2011. At first my five-year-old protested the basil, but ended up eating the sandwich and exclaiming, “Mom, it is the BEST grilled cheese ever!”
Enjoy this easy dinner side that evokes summer nostalgia with every bite.
Capre Sandwich
Ingredients:
Mozzarella roll (I like to buy pre-sliced, but any kind is fine)
Fresh basil leaves, torn
Tomatoes, sliced
Favorite crusty bread
Fresh garlic
Olive oil
Balsamic vinaigrette
Directions:
  1. Pre-heat oven to 350.
  2. Slice mozzarella cheese
  3. Rub bread with fresh garlic
  4. Spray cookie sheet or rub cookie sheet with olive oil. Put bread on sheet and then place sliced cheese.
  5. Stick bread opened face into the oven for 5-10 minutes until slightly bubbly and browning.
  6. Place tomato, basil and sprinkle with balsamic vinaigrette and serve.
