Kicking off the New Year with Simple Food

A few days before 2012, my five year old asked me what a New Years Resolution is. In my head, I wanted to answer, “It is when Mommy and Daddy throw out all the junk food and try to lose a few pounds.” However, my heart had a different answer. I told her, “It is a new start, a new year, and people make promises to themselves to make themselves and their world better.”
Elise looks at me and says, “My resolution is to play more and see a rainbow.” Simple. So my resolution this year is to make it simple. Food. Parenthood. Life.
Starting with simple food. This kid friendly, simple dinner will also make your food budget smile.
Tilapia Tacos
Ingredients:
6 Tilapia Filets
1 clove of garlic chopped
Olive Oil
1 tsp of grated lime rind
1/2 cup of salsa verde
1 avocado chopped
1/2 cup of broccoli slaw
12 corn tortillas
Directions:
  1. Round pan with olive oil and throw in garlic.
  2. Cut Tilapia filets into strips.
  3. Add grated lime rind
  4. Saute fish until white, usually 5-7 minutes and fish should flake easy
  5. Add salsa verde to fish and with spatula chop into smaller pieces. Cook on low for 3-4 minutes.
  6. Put fish into corn tortillas and top with chopped avocado and slaw.
