Winter Date Night In

For a recent date night at home, my husband and I rented The Help. To go along with the southern theme, I made fried chicken and spinach, but with a healthier twist on the classic southern dish. The meal was quick and easy and a perfect compliment to the movie. Both my husband and I enjoyed the movie. However in true fashion, I think the book was a bit better.
What do you like to whip up for movies in?
Spicy (Healthier) Fried Chicken
Olive oil
1/3 c red hot pepper sauce
2/3 c water
1 c flour
2 1/2 tsp salt
4 tsp cayenne pepper
1 tsp pepper
1 tsp onion powder
1/2 tsp paprika
1/8 tsp garlic powder
4 chicken breast fillets

  1. Mix hot sauce and water in a bowl.
  2. Mix flour w/the rest of the spices in another bowl.
  3. Pound chicken pieces til thin.
  4. Coat each piece w/flour, then dredge it in the pepper sauce mix,again in the flour mixture and set it aside until the rest of the chicken is coated.
  5. Put enough olive oil in frying pan to coat pan.
  6. Put chicken in hot pan, my best test is that you need to hear the chicken sizzle. Cook on each side 5-6 minutes until cooked all the way through and golden brown.
Rachael Ray’s Wilted Spinach
2 (16 ounce) packages of triple washed fresh spinach
1 tbs of extra virgin olive oil
3 cloves of garlic, crushed
1/4 teaspoon of nutmeg
Salt and Pepper to taste
  1. Pick spinach free of large stems and coarsely chop.
  2. Heat a large skillet over moderate heat.
  3. Add extra-virgin olive oil, 1 turn of the pan, and garlic.
  4.  Add spinach in bunches, wilting and turning leaves in the pan, until all of the spinach is incorporated.
  5. Season spinach with nutmeg, salt, and pepper, to taste.
