Cauliflower “Popcorn”

Ingredients

  • 3 cups small cauliflower florets
  • 1 tablespoon olive oil
  • ¼ teaspoon pepper
  • 2 tablespoons Parmesan cheese

Directions

  1. Heat oven to 450° F.
  2. Place cauliflower florets in bowl.
  3. Drizzle with olive oil and sprinkle with pepper and toss to cover.
  4. Spread out on baking sheet and roast uncovered for about 20 minutes or until lightly browned.
  5. Stir once or twice while roasting.
  6. Remove baking sheet from oven.
  7. Sprinkle with Parmesan cheese and enjoy.

Makes 6 servings (Serving size equals ½ cup.)
